White wines with a character of their own
Start with the most distinctive one: Tamjanika, the Balkan cousin of Muscat, smells of orange blossom and white peach yet finishes dry. Žilavka from Herzegovina is its opposite — cool, saline, straight. Add the nearly forgotten Bagrina, the Morava variety, and Chardonnay and Sauvignon Blanc that turn out leaner here than in warmer regions.
On the shelf: Trijumf Gold, Trijumf Selection and Trijumf Late Harvest from Vinarija Aleksandrović, Hercegovačka Žilavka from Vukoje, Tamjanika from Jovac, Plavinac and Milijan Jelić, and Sauvignon Blanc from Vila Vina.
Serve chilled but not ice-cold — at 10–12 °C the aromatics survive. They work with fish, fresh cheese, roasted vegetables and a spread of Balkan starters. Continue to red wine, rosé or the full wine range. Sold only to persons aged 18 and over.
